This is a manga, RL Logic don't matter. We've seen it time and time again in manga that warm up fights do happen. To say the least.

Ulti. Yamato is obviously stronger than her. But I don't think Ulti's story ends with getting beaten or being a warm up for Yamato. but That's just me.

Well when people say "warm up" i think they mean a fight that takes place on the same arc as another that can be considered the main conflict.
None of those fights were literal warmups, but were followed by Luffy's main opponents from those arcs.

Luffy didnt had a problem in delaying the escape just soo he could 1v1 katakuri tho.

Luffy is the Main character no matter what the purpose of an arc is, he will get fights somehow. And WCI was critical for his growth . Thats why Luffy is the only strawhat in wholecake island that got a 1v1 fight. Other than that theres no point for anyone else getting a fight, What would Sanji getting a 1v1 fight accomplish? What good is taking out one member of their crew? Especially when we know they just leave the arc without defeating the crew anyways.
