Did you just compare Usopp's defining scene about repairing Merry and losing that chance to....Jack losing to Minks? Comparing a main character storyline to a sub storyline between 3 secondary characters?

You only find it ridiculous because you are missing the point of comparison.
The way you phrase it pretty much shows your bias. It isn't a matter of Jack losing to minks but closing a revenge subplot that started five years ago and gave us some of the most powerful scenes of the last years. Jack was the one who attacked Zou with no hesitation, who destroyed the country and mutilated the whole tribe, and especially the leaders, for the sake of finding one of the retainers that are now avenging their lord. That is the storyline, and it doesn't matter at all that they are secondary characters because that is no reason to skip the emotional moment of Neko and Inu finally consummating their revenge.
The point of comparison lies on how Oda did use in a proper way the elemments he had back then to build an emotional scene. If you don't like the moment I chose, take the attack to the Franky House then, that consisted on fighting panels of the crew avenging Usopp by defeating a bunch of tertiary minions. What Oda did with Jack was comparable to skipping this whole attack and simply showing us the group entering the house and then resting above its debris; in this case, Neko and Inu getting ready to attack and then Jack falling, and the problem there is that Oda misses the high point of the confrontation, the exact moment in which emotions are released (emotions that were built up on us as readers when witnessing the tortures they suffered in order to protect a friend), and gives us an efortless Wiki-like resolution ("Neko and Inu jumped on Jack while in sulong form and were able to put him down") that lacks narrative strength and interest.
A proper writing should have allowed us to feel the anger of the minks, seeing how they beat up Jack to almost death, witnessing how Neko filled his body with the bullets from his prosthesis and how Inu slashed him with his new "leg". Just like we were given the emotions from the crew destroying the Franky Family instead of just the cognitive resolution of thinking, but not feeling, that they got what they deserved.
