Akainu creates fumes on attack. Kaido only created it one time what we see above. Then he manipulates it. Also fumes are mostly generated on mouth of volcanoes. They are not always present in lava

Some people forget how extremely versatile Kaido's devil fruit is. He can scream lightning, create tornados and razor sharp Wind attacks, breathe fire, etc. Him making magma is not a stretch at all
