Sanji's speciality should be CoO while Zoro's should be CoA but I think when you want to rival a dude who's epithet indicates that he know CoO on another level I think Zoro will need to be top tier CoO user.
I think Zoro and Sanji will be equal with Zoro having the edge on one of the aspects of advanced CoO and Sanji will have the edge on Future Sight.

this is not what the manga has depicted so far. Zoro has better CoO feats already.

Sanji's CoO is clearly better than Zoro's (as evidenced by their respective CoO feats combined with the fact Zoro doesn't specialize in CoO) and it will always stay that way. This is how it should be anyway, Zoro is the impulsive guy who fights his opponents recklessly without thinking too much and he relies on his ability to tank powerful attacks. Sanji is more cool-headed, analytical and relies more on his speed, agility and ability to dodge attacks.
