I find it odd that Zoro hasn't displayed it yet, when Roger's right hand man too has CoC. With Zoro seemingly having even stronger ambition than Ray and with the new PK Crew surpassing the old one.

Oda needs to give Zoro CoC to validate CoC and not to Validate Zoro.
CoC is supposed to represent will power and ambition right, then Zoro not having CoC is equivalent of having a NBA Hall of fame where greatest NBA legends will be inducted.
Zoro not having CoC would be equivalent of NBA hall of fame not having Michael Jordan in it.

It's not very surprising. Oda will want to show Zoro's CoC at a moment where it will have the maximum impact. Think about Katakuri's- doesn't use it at all until nearly the very end of the fight where he symbolically embraces his true self and takes on Luffy as an equal.
Zoro will be the same. It'll be saved for a climatic moment in the fight in Wano. It wouldn't make much sense before now to show it- Zoro's not been heavily involved in any of the New World arc plots before now.
If he doesn't show it this arc he won't have it.
