Oden didnt kill Kaido, Zoro will. That's surpassing him if you have any logic.
Oden could have aimed wherever he wanted, it was not enough.

The best I can hope for EoS Sanji is to be able to stall an admiral for a while without getting annihilated. However I don't believe that Kaido is stronger than the admirals.

So fundamentally despite Current Sanji is one shot material for Kaido, there's ground for EoS Sanji to act as a solid nuisance.
