I'm fairly I understand the quote perfectly since it's not really that hard for anyone to understand. Neither of you, as well as others, seem to get the point of why it's still a fuck-up and your responses are pretty evident of that, so I'll elaborate whilst still hoping that this isn't the end of the battle.
1. It's a statement he never needed to make in the 1st damn place since the result is the same.
2. The result itself is painfully uncreative. Like I know I should expect repetitive & unoriginal outcomes but come on...
So let's expand a bit here.
1. It's Oda fault for promising something he never needed to promise. Luffy vs Kaido has long since been a disappointment on it's own for multiple reasons, but when you add to this statement that he made six years ago, no wonder he's getting backlash when he essentially did was hype up a terrible fight even further than necessary. It's bad enough that this arc has been long since hyped for about a decade now, taking it a step further isn't going to do it any favors.
2. Thanks to previous chapters, now there's no other ways that Luffy could defeat Kaido without punching (or kicking, headbutting, or any other kind of lame direct physical attack). Oda already had the tools that since he spent this whole arc & timeskip making for Luffy to succeed. So instead of literally anything else better, Oda set himself up for this fuck-up. And the G5 + Awakening reveal makes it even worse. The Nika reveal makes the claim that Luffy's fruit is supposed to be the most ridiculous fruits ever that is only limited by its user's imagination, and since this is the case Oda COULD HAVE used any method for Luffy to defeat Kaido. I mean he grabbed fucken Lightning not too long ago.
And a lot of the defenses (like yours) just come off as cope and some degree of mental gymnastics for what he meant. A lot of them are just pre-emptive excuses just in case Oda fails to deliver his promise.
The simplest way to interpret Oda's message is he didn't want for the defeat to involve a punch, and quite literally said his audience wouldn't be satisfied with it. I'll say it again - Masquerading it with new power ups still makes it a punch, which is why a portion of fans are not satisfied with it. Alright, Oda didn't really deliver with his original statement. I won't crucify him but I'm still going to criticize him for not figuring out a more creative way to end this fight, like the way Big Mom was taken out by Kid and Law. Kaido and Luffy are practically just fist fighting, which is the most boring way for this fight to conclude. Luffy is not a martial artist or athlete that has to obey the rules. Luffy's is a pirate and not only that, he also has the most broken DF that can be use anyway he want.

The distinction from just punching hard with extra effort vs. having several in universe foreshadowed abilities converge to allow him to deliver a stronger punch is clear to anyone who puts a bit of thought into it.

Luffy's speciality was confirmed as CoC, Zoro's was confirmed as CoA.
Unlike CoA which can be trained, CoC cannot, so being a specialist is much more important.
