There is no special symbolism for Carrot. Guy is just making up stuff as usual. The Dukes are a cat and a dog named 'Cat' and 'Dog'. The Charlotte siblings are named after random food and beverages. But Carrot is supposed to be special for no reason.

Yamato isn't exactly a boring character, she stayed 20 years imprisoned in Wano, what ideal could she have? If she knew nothing of the outside world was a thing, but after having seen Oden execution and read his diary, she has dreamed to go adventure for all her life, in One Piece the search for freedom is the highest ideal. For Carrot instead, the fact that she has been happy her whole life doesn't mean anything, I don't think that can be the reason she won't join if she won't. Until now not her nor Luffy mentioned anything about her joining. Before the raid of Onigashima when I saw her on the Sunny I though it was her but the current arc has been deludent for her. It's difficult exclude one of the two completely. Is even possible that neither will join or both, but probability wise seem like Yamato has the lead for the moment. In the other cases was easy because every Straw Hat had a dedicated arc, now became difficult
The lack of Carrot is definitly strange, foundamentaly, from a writing point of view. Oda didn't only put down Carrot, he made her completely disappear.. it's logical from a narrative standpoint as Wano is not Carrot story, but she should at least have some more interaction to be in equilibrium with the previous arc.. but no..
Either way, their is a clear will to make her completely vanish from the story. The question is .. why?
