Zoro is not Mihawk. Mihawk is allegedly already the strongest person alive regardless, so Zoro doesn't necessarily have to go after all kinds of people in order to go for the strongest.
His primary interest is fighting off Kaido for a noble cause, not really testing himself. Which doesn't mean it's not also for that.
If he could however he would rather challenge Mihawk again right now, not Kaido.
Of course he gets pleasure from challenging strong opponents, my point is that he foremostly does when they are swordsmen.

Oda gave Judge's Son Swim fruit to spy on girls and other nasty business.
Senor Pink is respectable, however, Judge's Son is not.
Just as how Kaido is a Pirate, yet, Zoro is an honorable swordsman.

Zoro is a swordsman; Luffy is stronger than him. Mihawk is a swordsman; Kaido is stronger than him. Luffy nor Kaido are swordsmen.
What Sanji has anything to do with this?
