Because in that era, everyone uses their lives to fight for their dreams. For an enemy, when their dream has been shattered, it is the same as losing a fight, and as painful as death. I believe, for a pirate not to kill an enemy, it's giving them a 2nd chance to fight for their dreams.

I'm not too sure if I understand the logic behind giving Kaido a 2nd chance to fight for his dreams.

That's what I believe will happen too. At the very least it'll be much better than Luffy defeating Kaido 1v1 which would be a clear power creep in my opinion.
However it looks like it's heading to the 1on1 senario for now.
