Its not because he can't kill but he never showed such intentions unlike zoro.

Luffy always aimed to surpass his opponents - didn't kill croc, enel, Lucci, Moriah, hody, doffy, arlong, buggy, Caesar and so on but zoro is different. He didn't kill his opponents but he has shown intentions and his attacks are more lethal than what Luffy has.....

Kaido’s recovery has limits

but there’s no way luffy doesn’t have the ability to kill someone with his bare hands. I think Oda might have just been saving luffy’s first kill for someone special

Luffy won't solo someone like Kaido so soon, he barely learned advanced haki and that still technically puts him below Old Ray

He will grow whilst fighting Kaido, probably will use his awakening for the first time but he will need help
