That was my guess. The pig will be served as the main dish for the festival, and the SHs and the main forces will hide in its belly and get to the festival. A kind of Trojan Horse (Pig). The Caribou itself can play a significant role in this. They might even put something in the sake.
I keep forgetting about Sanji's invisibility. Now it is no problem to arrange the sabotage.

There are enemies that turn out to have a good side in them. However, it's usually pretty clear from the beginning which characters are possible for that kind of outcome.

Oda doesn't hide his intentions, when he wants to make a villain REALLY despicable though (Spandam, Saint Charlos etc.).
Orochi is part of that group, he is the definition of how Oda portraits his most disgusting scumbag characters.
Starting as a creepy and submissive guy, going on to ruin an entire country with the help of others, destroying the Kozuki family, murdering his old mentor on-screen and generally being a coward with paranoia. There is no redemption for him.

Read on another forum, that Kurozumi also means coal. And given Orochi's dirty appearance, it could be that he belongs to the lower laboring class and wished to raise to the status which the Kozukis had.
