Why bother climbing a sky island and falling when you can just jump in the water ?

Probably that Kaidou can't be drown. Because he is a dragon and was a carp or something.

Plus how Vegapunk did get Dragon"s Fruit ? Maybe he did experiment on original Kaidou and achieved immortality for the sake of a Celestial Dragons order.
