Franky is awesome, strong and so on but he didn't accept a power up trampling on his own pride

Sanji is a key fighter in this arc. lesser characters are fighting Flying 6 so it's only logical he'd take out the most troublesome guy outside the Yonko as they're being dealt with by the main fighters of SH crew.

Or Drake and Chopper, the doctor, might deal with the plague while Sanji uses the skywalk, the only new thing he learnt during the TS excluding haki, and the RS to fight a guy with, potentially, four wings who wants to kill Momo and the scabbards, whose life is so important to Sanji (especially Kinemon's)
