I'm going for the "hybrid mode is best suited for fighting, but considering the physiology of some animals, mythical or not, full beast mode might give them better offensive or defensive capabilities, that would be diminished with humanoid traits".
Seems kinda the best view as things stand.

And i think i know why. The second Zoan introduced in the story is Chopper. The same chopper with no “Full beast” form as of yet and multiple versions of “hybrid”... If Oda ever clearly states there exists a “Full beast” mode then immediately people will ask about Chopper and he aint having that
This here is the power of ambiguity. The same way paramecias are ambiguously anything so that Oda can do whatever he wants, Zoans will be left ambiquous as well so that Oda can have Chopper exist like that and even have Black maria just be half human half spider like that. You can argue that Black maria doesnt make sense but then you get asked “Where have you seen in the manga that its a rule that she cant exist?” And there is no rule
